

Beef N Bean Burrito
Ingredients
- 1 Pound Lean Ground Beef
- 1/2 Cup Chopped Onion
- 1 Minced Garlic Clove
- 2 teaspoons Chili Powder
- 1 teaspoon Dried Oregano
- 1/2 teaspoon Ground Cumin
- 1/2 teaspoon Salt
- 1/4 teaspoon Ground Pepper
- 1 Can (16 ounces) Refried Beans
- 1 Can (10 ounces) Enchilada Sauce
- 6 (8-inch) Flour Tortillas
- Shredded Lettuce
- Optional Garnishes
Directions
In a large skillet over medium heat, cook the ground beef, onion and garlic until meat is cooked through and then drain well. Return the mix back to the skillet and add chili powder, oregano, cumin, salt, and pepper. Simmer for 10 minutes, then add the refried beans and only 1/2 cup of the enchilada sauce. Heat this mix thoroughly.
Wrap tortillas in foil and place in a 350 degree oven for about 10 minutes. Meanwhile, line a serving platter with shredded up lettuce and spoon about 1/2 cup of the ground beef mixture onto each tortilla. Roll tightly and place seam-side down on serving platter and spoon remaining enchilada sauce over tortillas. Garnish and serve with any of your favorite toppings
