Carrot Bread 01

Ingredients

  • 2 Eggs
  • 1 Cup Sugar
  • 2/3 Cup Oil
  • 1 and 1/2 Cups Flour
  • 3/4 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1/2 teaspoon Salt
  • 1 and 1/2 Cup Finely Grated Carrots
  • 1/2 Cup Chopped Walnut (Optional)
  • 3/4 Cup Raisins

Directions

Place raisins in a bowl of cold water and set aside. Beat the eggs – Add sugar and oil to the beaten egg; Beat thoroughly – Combine the following: Flour; baking soda, cinnamon, nutmeg and salt - add this to the egg mix and beat well. Drain and rinse your raisins, stir the carrots, walnuts and raisins into the mix and blend in well. Pour your batter into a well- greased 9x13 bread pan and bake at 350 for 50 minutes to 1 hour (do a cake test). Remove from oven and cool for 5-10 minutes before removing the bread from the pan – allow bread to rest on a cooling rack.
