Avacado Bacon Quesadillas

Ingredients

  • 4 Slices Bacon
  • 2 Cups Grated Cheddar Cheese
  • 1 Ripe Avocado, Thinly Sliced
  • 4 (10 inch) Tortillas
  • 1/2 Cup Sour Cream
  • 2 Tablespoons Chopped Green Onion
  • 1 Tablespoon Lime Juice

Directions

Preheat barbecue to medium - high and barbecue bacon until cooked, remove from heat. Reduce heat to medium then divide cheese and avocado into 4 portions. Lay 2 tortillas on the grill and layer a portion of cheese mix on half of each tortilla. Crumble the bacon over top and fold each tortilla in half, cook for 2-3 minutes on each side; Transfer to plate – and allow to cool slightly then cut into wedges. Stir the sour cream with the green onions and lime juice in a small bowl. Serve the sauce with the wedges
