Aunt Peggys Salad

Ingredients

  • 2 Cucumbers
  • 1 Pint Cherry Tomatoes
  • 1/2 Vidalia Onion - Very Thinly Sliced
  • 2 Tablespoons Chopped Fresh Parsley Leaves
  • 1 Tablespoon Apple Cider Vinegar
  • 1 Tablespoon Olive Oil
  • Salt and Freshly Ground Black Pepper

Directions

Peel and thinly slice the cucumbers and cut the cherry tomatoes in half. Very thinly slice the onion and chop the fresh parsley leaves. In a large serving bowl, toss together all of the vegetables. In a smaller bowl – blend the oil and the apple cider vinegar together; Pour over the vegetables and cover and let the salad chill well before serving.
