Black Bean Chicken

Ingredients

  • 1 Pkg Knorr Side Kicks (Harvest Chicken Rice Side Dish)
  • 1 Can (325g) Corn – Drained
  • 1 Can (325g) Black Beans – rinsed and drained
  • 1 can (125g) chopped green chilies – do not drain
  • 1 Tablespoon Vegetable Oil
  • 1 Pound Boneless Skinless Chicken Breasts – Cut in Strips
  • 1 Cup Shredded Monterey Jack cheese

Directions

Prepare Knorr Side Kick according to the package directions. Stir in corn, beans and chilis In a large non stick skillet – heat the oil over medium- high heat and cook chicken Stirring frequently until chicken is cooked thoroughly Arrange rice mixture on serving platter and then top with chicken and cheese.
