Mushroom Soup

Ingredients

  • 2 – 3 Tablespoons Butter
  • 1/2 Cup Onion (Chopped)
  • 2 Tablespoons Fresh Parsley (Chopped)
  • 1 Pound Fresh Mushrooms (Cleaned and Chopped)
  • Sea Salt to taste
  • Pepper to taste
  • 1 Garlic Clove (Chopped)
  • 1 Slice Firm Bread or 1 Cup Bread Crumbs
  • 1 Quart of Hearty Mushroom Stock, broth or Stock and water
  • 1/2 - 3/4 Cup Heavy Cream

Directions

Melt butter in a large stock pot over medium high heat. When it foams, add the onion and the parsley; Cook this for a few minutes and then add the mushrooms Stir them around to coat them really good, Season with 1/2 teaspoon of salt and cook over medium for a few minutes and then add the garlic and the bread crumbs and the stock. Bring this to a boil and then reduce heat to simmer for about 15 minutes covered. Puree the soup, leaving little bits of the mushrooms - Return to stock pot add the salt and pepper to taste Slowly swirl in the cream
