A Little History

I had a normal 80's childhood - strong values and such..very lucky to have parents that were concerned about my future and being successful in whatever it may bring. My mom was a real homemaker through and through and she was bound and determined to pass these lessons on to me. As a normal pre - teen kid it was not recieved as well as it should have been. LOL - I did not want to learn how to cook, plant gardens, sew and clean house! I wanted to play with my friends and explore what was out there..not what was in the kitchen! Oo..but the cards were stacked against me from the get go, as my dad was not only a chef in the navy - so you can imagine I was barking up the wrong tree looking for any sympathy whatsoever from him! I have to give them both credit as they repeatedly banged their heads against the wall trying to get me into the kitchen as well as into the sewing room. NO! I am NOT going to create a sewing section! So - have no fear, Sewing is not going on here!

Moving Along...

As years passed and it became clear that if I wanted to eat more than just macaroni and cheese with hotdogs (which by the way is still a favorite of mine!) - that I better start learning how to make actual meals that have some nutritional value to them! It was then that I started to remember bits and pieces of what my mom had taught me and began experimenting... Ooo! this was an adventure! One that had a "no going back" attached to it! I started with just doing the basic survival food creations. That went well and it served its purpose until I met my special partner :) I then wanted to create awesome stuff! JuMpInG on the almighty bandwagon of not just nutritional meals - but awesome tasting stuffs! And so it begins....

Something you will notice right off the bat as you look through the recipes here at Jenns Kopper Kitchen is that the recipes are missing what some believe to be KEY to recipes...serving sizes and fat content! These are not attached to the recipes for a reason: no serving size? That is because through the years of collecting recipes - I understood that if something was good, leftovers (if any) can be frozen for another time, I can kinda tell if a recipe is geared toward a "group" or a "family" and just mentally adjust the ingredients in order to fit my preferred serving size. No fat content? That is because I personally do not care about how many calories are in something that I want to eat. Life is tooo short to count calories and moderation serves our house much better! So, yes, they are void of all dietary information.
